The basis of Tea Forte Bombay Chai is black tea from the Nilgiri region of southern India. Nilgiri literally means "Blue Mountains" and is located next to the regions of Assam and Darjeeling, the most important black tea producing regions in India.

Chai is the word for tea in many languages and is supposed to be derived from the Cantonese "Cha" (also in Persian, Hindi, Korean, Russian, Mandarin, and Swahili).

In the Western world, Chai tea is mainly considered as a spicy, full-flavoured Indian black tea that is enjoyed from morning to evening in India, where it is traditionally served with boiling whole milk and sugar for a unique infusion.

The wonderful blend of ginger, cinnamon, cardamom, cloves, star anise, black pepper and flavours gives Tea Forté Bombay Chai its character and contains very aromatic and tasty spices.

This black tea is known as a very tolerant black tea, i.e. it is almost impossible to be too stiff.

Our Tea Forte Bombay Chai combines black tea with the spices found in a traditional Indian masala chai. The recipes of the Chai vary enormously, using different spices, sugars, quantities and types of milk. However, they are uniformly well thinned and sweetened.

How to prepare a Latte Chai

Start with a good quality spicy cellar and prepare the tea as you would normally do with a cup of black tea, unless you reduce the amount of water to a quarter cup. Heat the water to 96°C (just below the boiling point) and pour it over a Bombay Chai pyramid infuser (or one tablespoon of loose tea in a reusable infuser) then let it steep for three to five minutes.

The longer the infusion, the more pronounced the flavour, and since you will be adding milk in a while, remember to let it steep for five minutes for a robust and full-bodied Latte Chai.

Like black tea in general, spicy chai tea boasts a powerful range of antioxidants in every cup. Medical research continues to deepen its exploration of the benefits of tea, while early signs indicate that tea may offer anticancer properties, as well as the ability to promote cardiovascular benefits and fight inflammation and even slow down some signs of aging.
