In South Africa, rooibos is a drink rather consumed with some milk.

We harvest its leaves, we cross(spend) them in cyclists to break fibers there and so begin the fermentation then we air them outdoors.

The more the tea is red, the more it is good quality. 
Excellent to the taste and for the health, it does not contain caffeine.

There is also a variety that we call green rooibos, resulting from the same plant but fermented, only dried, richer in antioxidants.

The word Rooibos draws its origin of the Afrikaans and wants to mean reddish bush. 
We call it improperly red tea in Occident while in fact it is about a shrub which is not some tea but an infusion of the family of locust trees.
It grows only in the mountains of South Africa, all the tests made outside this soil failed.
